One of our favourite side of the road stalls… Apam Balik Nusantara still folds out some of the best apam balik in KL. Crisp, chewy, fluffy and sweet… it’s got all your happy textures in one hand dessert…

Those who know, know… that the best apam balik in town is down a dark little street in the middle of Kampung Baru. This is a fluffy, pillowy kind and to know it’s true power is to wait by the side of the road as the Pakcik makes it fresh and then, literally burn your mouth eating its molten filling.
From observation, the Pakcik continuously lambung the batter, taking up a ladleful and aerating it in the gayung.
This makes it fluffy on the hot pan. Once ladled on, it doesn’t bubble up that much but remains thick and creamy. The result of this is a chewy and crispy apam with flavour combos you can choose from (there are about 20 combos).
The Chocolate Banana is done well. Once the apam is nicely browning and the insides are still soft, a dollop of margarine goes in, slices of banana is fanned out artfully and then a handful of chocolate rice. This is then folded over where more margarine is brushed on the crisp skin with just a little drizzle of condensed milk.
You might think that this might be a little bit too much in the sweetness stakes but everything just balances out nicely. None of the ingredients are especially premium but somehow it feels good together and doesn’t taste cheap. Even eaten the next day it’s still good.
The piece de resistance is the Durian Cheese apam balik. This madness is creamy and done so expertly that you can munch it in your car and it won’t stink up the place. The durian paste is homemade and gives a lovely milkiness to the filling while the cheese, grated generously on top gives it a saltiness that takes it up a notch. From the first crunch, this simply melts in your mouth. I dare you not to moan a little when eating this.
Yup you can add corn on top of the durian and cheese too for a bit of crunchy texture
Apam Balik Nusantara is just a prefect place to stop by on the way home for dessert. Share it. Try not to burn your mouth. Take it home and eat it the next day for breakfast. It’s all good.
