Curry Mee

Noodles with hot savoury curry broth is just to die for. There are no limits to what condiments and noodles you can use to build your bowl. Get creative and you will have an awesome bowl of Mee Kari for your meal!

Ingredients

    1. 4 tbsp. Baba’s meat curry powder
    1. ½ cup cooking oil
    1. 1 chicken drumstick and thigh (skinless & cut into small pieces)
    1. 2 cups water
    1. 1 chicken stock cube
    1. 1 tsp. tamarind juice
    1. 1 cup coconut milk
    1. 6 pieces fried tofu
    1. 2 sprigs curry leaves
    1. Salt & sugar to taste

Blended ingredients:

    1. 6 shallots
    1. 4 cloves garlic
    1. 1” ginger
    1. ½ “galangal
    1. 3 big red chillies
    1. ½ tsp. turmeric powder
    1. ¼ cup water

Build your bowl of Mee Kari with:

    1. Yellow noodles
    1. Raw bean sprouts
    1. Red chilli slices
    1. Hard-boiled egg
    1. Mustard leaves
    1. Crispy shallots
    Kaffir limes

Instructions

1. Blend all the blended ingredients together into a fine paste. Pour it out into a bowl and mix with the curry powder.

2. Heat up the oil on medium high and sauté the blended ingredients and curry powder paste until it is fragrant and the oil splits to the top.

3. Add in the chicken pieces and cook until they shrink slightly. Let it absorb the wonderful paste.

4. After 2 minutes or so, add water and bring it to a boil. Cook until the bones are no longer pink.

5. Crumble in the chicken stock cube, tamarind juice, coconut milk, fried tofu and curry leaves. Boil over medium low heat for 10 minutes, letting all the flavours fuse together.

6. Season with salt and sugar to taste. Ladle the hot curry broth, chicken bits and fried tofu into your bowl of noodles and condiments. Slurp up and enjoy!

Notes

If you would like your curry broth to be a thick, just let it reduce a little bit longer. No need to add corn flour. If you have a bit of time, marinade the chicken pieces in a little bit of curry powder. Let it sit for 15 minutes to give the chicken a more intense curry flavour.
