Sardine Curry

Everyone should know how to make a sardine curry. Of course there are many variations out there that are simpler or more complicated. You just have to pick one that suits your time and taste buds the most. The beauty of this dish is that it’s quick and easy to make and taste darn good every single time.

Ingredients

1 big can sardine/mackerel in tomato sauce
2 tbsp. oil
½ tsp. mustard seeds
1 sprig curry leaves
5 shallots, sliced
½ inch ginger, finely chopped
1 tomato, cut to wedges
1 small packet fish curry powder (mixed with a little water to from a paste)
1 cup water
Salt and sugar to taste

Instructions

1. Heat oil on medium and fry mustard seeds and curry leaves until it stops popping. This will only take a few seconds. And then throw in shallots and ginger and fry until fragrant.

2. Add in tomatoes wedges and curry paste. Cook until tomatoes are slightly soft.

3. Pour in the entire can of sardines and water. Simmer until curry is slightly dry and season with salt and sugar to taste.

Notes

You can use fish or meat curry powder. Difference is that fish curry powder has slight sour-y flavour which is great for seafood and meat curry powder is more savoury and fragrant. If the taste of sardines or mackerel is too fishy for you, add about 3 tablespoons of asam jawa juice to your curry to mellow it down.
