Top 5 Emergency Cookies to Save Your Hari Raya!

One more week till Raya and you still have lots to prepare. If you haven’t started on your Kuih Raya, don’t panic! We got you covered with these 5 super easy cookie recipes you can whip up in no time. Get your cookie jars ready!

Life saver kuih Raya!

Kuih Raya is a must have. NO KUIH, NO RAYA! …right? Oh well, there’s are a great selection of cookies at most supermarkets but those can set you back RM20 – RM35 ringgit per jar, times 3 or 4 types = yikes! It can definitely eat your budget. Chill, no worries… We have 5 super easy recipes you can do yourself at home at a cheaper price!

Almond London

Almond London Cookies are whole almonds wrapped in a buttery cookie and covered with melted chocolate. This Raya favourite will be gone faster than you can say Kuih Raya!

Ingredients
125g butter, room temperature
75g icing sugar
1 egg yolk
1 tsp. vanilla essence
225g flour
1 tsp. corn flour
150g peeled almonds
30g chopped almonds, toasted
350g chocolate chips

Method
1. Beat butter and icing sugar until it is pale.

2. Add in egg yolk and vanilla essence and mix until well incorporated.

3. Switch off beater and add flour and corn flour, mix until everything is well combined and forms a dough.

4. Pinch a small ball of dough and flatten with your thumb. Place a piece of almond in the centre and re-shape the dough into a ball.

5. Put dough ball into little cookie cups and aligned them on a tray.

6. Bake at 170˚c for 20 minutes. While baking, melt chocolate chips over double boiler.

7. Cool off the baked cookies and pour melted chocolate on top of cookie and garnish it with chopped almonds.

8. Let the chocolate firm up and cool down before storing into cookie jars.

Note: Keep it in a cool place to ensure chocolate doesn’t melt.

Chocolate Chip Cookies

This super easy recipe is an easy 3 step baking. Really, it is just mix, shape and bake. Simple as that!


Ingredients
½ cup butter
½ cup margarine
1 tsp. vanilla essence
1 cup brown sugar
½ cup white sugar
1 egg
1 tsp. baking soda
2 tsp. corn flour
2 cups flour
2 cups chocolate chips

Method
1. Beat together butter, margarine, vanilla essence, brown sugar and white sugar until pale.

2. Beat in the egg until well incorporated.

3. Add baking soda, corn flour and flour, mix until there are no white flour lumps left into.

4. Lastly add in the chocolate chips and mix combine.

5. Pinch the dough into little balls and place it on a greased baking tray.

6. Bake at 180˚c for 10 – 12 minutes.

7. Let it cool down before you place it into your cookie containers!

Peanut Butter Cookies

Anyone who loves peanuts, or all things nuts, will go nuts for these.


Ingredients
½ cup butter
¾ cup peanut butter
⅓ cup brown sugar
⅓ cup white sugar
1 egg
1 tsp. vanilla essence
2 tbsp. fresh milk
½ cup flour
1 tbsp. baking soda
80g castor sugar, to roll dough in
50g chocolate chips, for decoration

Method
1. Beat together butter, peanut butter, brown sugar and white sugar until well combined.

2. Add in egg, vanilla essence and milk and beat well.

3. Fold in flour and baking soda together with a spatula to form into cookie dough.

4. Pinch a little dough ball and roll it in castor sugar

5. Place it on a greased baking tray and lightly flatten the dough ball with your fingers.

6. Decorate it with chocolate chips and bake at 170˚c for 15 minutes. Allow it to cool down before storing it in jars.

Cornflakes Cookies

Get the kids involved in this! It is super fun and easy to make.


Ingredients
1 egg white, from 1 whole egg
½ cup sugar
½ cup desiccated coconut
1 tsp. vanilla essence
½ cup peanuts, crushed
2 cups cornflakes, crushed
1 tsp. butter, melted

Method
1. Beat egg white and sugar till it becomes creamy.

2. Add in the rest of the ingredients and fold them together.

3. Shape it using a mould or just with a measuring spoon.

4. Place them on a greased baking tray and bake at 180˚c for 15 minutes.

5. Cool it down before storing!

Dahlia Semprit

OK this needs a little more time and patience but still easy to do. Semprit is a classic Kuih Raya and everyone should make this at least once in their lifetime.


Ingredients
230g corn flour
125g butter
125ml condensed milk
1 tsp. banana essence
Yellow colouring, a few drops
Red cherries, chopped into tiny pieces

Semprit Mould

Method
1. Mix together corn flour and butter with a spatula.

2. Add in condensed milk, banana essence and yellow colouring. Mix until it form a stiff dough.

3. Pinch little lumps of dough and stuff it into the Semprit mould. Press out the cookie floretts on a greased baking tray.

4. Place a piece of chopped red cherry in the middle of the cookie florette.

5. Bake at 180˚c for 10 minutes. Do not brown it.

6. Let it cool to room temperature before keeping them jars.
