Salted egg flavoured squid or chicken has been a staple in Chinese restaurants’ menus but it blew up and became viral back in 2016. People still can’t get enough of it so why not cook this addictive dish for your reunion dinner?

Ingredients
Squid
2 medium squid, cleaned and gutted
¼ tsp. salt
Pinch of white pepper powder
1 egg, beaten
Oil for frying
Seasoned Flour
½ cup rice flour
¼ cup plain flour
¼ tsp. salt
Pinch of white pepper powder
Condiments
3 cloves garlic, chopped
3 red bird’s eye chilli, chopped
2 sprigs curry leaf
2 tbsp. oil
4 salted duck eggs
½ tsp. sugar
¼ tsp. salt
Instructions
1. Hard boil duck eggs in boiling water and scoop out the yolks. Mash it up and set it aside. Reserve the egg whites for fried rice or add into gulai.
2. Cut cleaned squid into bite sized pieces. Rings or squares, it us up to you. Season squid with salt, white pepper powder and mix in beaten egg.
3. Dredge squid into seasoned flour, make sure every squid’s surface is coated.
4. Shake off excess flour and fry in hot oil until crispy. This should take less than 1 minute. Drain on paper towels.
5. Heat oil in a pan and sauté garlic and chilli until golden brown and throw in curry leaves. Pour in mashed up duck yolk and stir well. In a few seconds it will start to foam up.
6. Add in fried squid and mix well. Do not overcook. Remove from pan once it is thoroughly mixed.
7. Serve with hot rice and enjoy!
Notes
Fry the squid in batches so it will crisp up better. Don’t throw away the duck whites. Mash it up and it is great seasoning agent for fried rice.
